Good morning and welcome to another edition of Zion Maid! Today, we have a special guest joining us, Michelle, better known as Mimi, the owner of Mimi’s Cafe in Zion National Park. We’re excited to dive into her story, learn about her restaurant, and discover what it’s like to run one of the most beloved eateries in this stunning national park.

From Dream to Reality

Mimi’s journey to opening her cafe is truly inspiring. Born in Venice, California, Mimi moved to Southern Utah after graduating high school and attending community college. Her family had vacationed in Zion for over 25 years, drawn by the area’s beauty and the Shakespeare Festival in Cedar City. In 2003, Mimi followed her family to Southern Utah, where they bought and ran a bed and breakfast.

Growing up, Mimi’s grandmother was the only one who called her Mimi. This nickname became more than just a term of endearment; it became the name of her future cafe. “When I was in sixth grade, I drew a math project, and I drew Mimi’s Cafe,” Mimi shared. “It has been a dream of mine my whole life.”

Establishing Mimi’s Cafe

Opening Mimi’s Cafe wasn’t easy. The initial space was small, and the family faced numerous challenges, from retrofitting the building to managing finances. “We opened with nine tables,” Mimi said. “It was funded by my parents selling their bed and breakfast and opening credit cards. We hoped it would work, and it took a long time.”

The journey was filled with hard work, sacrifices, and a lot of creativity. Mimi emphasized the importance of having a solid business plan and not being discouraged by setbacks. “You can go to a hundred people who tell you no, but ask why. If they give you a reason and you fix it, that no becomes a yes.”

Surviving and Thriving Through COVID-19

Like many businesses, Mimi’s Cafe faced significant challenges during the COVID-19 pandemic. The park shutdown led to a temporary closure, but when it reopened, the cafe saw an influx of visitors from nearby states. Mimi’s team expanded outdoor seating and adapted their menu and operations to meet new demands.

One of the biggest changes was introducing online ordering and perfecting their takeaway options. Despite losing their other restaurant, Zuma, Mimi’s Cafe emerged stronger, ready to serve the growing number of visitors to Zion National Park.

A Menu to Savor

Mimi’s Cafe is known for its delicious and diverse menu. Originally starting with crepes, waffles, and paninis, the cafe now offers a range of mouth-watering dishes. Their 8 oz Angus burgers are a highlight, and the slow-roasted pork, made with a Dr. Pepper-based rub, is a customer favorite.

Mimi’s commitment to quality is evident in their menu, which also includes gluten-free options like rice flour crepes. “We’ve worked really hard on our crepe recipe,” Mimi said. “It’s different, a little more flour-heavy than egg-heavy because we put a lot of things in it and needed it to hold up.”

Building a Loyal Team

One of the most remarkable aspects of Mimi’s Cafe is the loyalty of its staff. With about 14 employees, some have been with the cafe for up to 12 years. Mimi’s family also plays a significant role, with her aunt serving as the general manager and other family members helping out in various capacities.

“Our staff is loyal to this business, and I feel honored to be part of their journey,” Mimi said. “It means we’re treating them well, they’re making enough to support their families, and they’re happy being here.”

Advice for Aspiring Entrepreneurs

Mimi’s advice for aspiring business owners is to find something you’re passionate about and work hard. “Everyone should consider some business of their own at some point in their life,” she said. “Having a business plan is crucial. Plan, plan, plan so that when you’re ready, you know the answers.”

She also highlighted the importance of not being discouraged by setbacks. “If someone tells you no, ask why. Fix that why, and that no becomes a yes.”
